Chhenapoda (Odia name for Cheese Cake) is a local delicacy prepared from cow cheese in the of 20th century originated in Nayagarh town of Odisha was very popular in Odisha kitchens. By Odia immigrants all over the world, Chhenapoda has cropped up in the western world as well and is very popular. The book authored by Dr. Ramesh Chandra Ray, Principal Scientist (Microbiology), Central Tuber Crops Research Institute, Bhubaneswar, Odisha, India (see the Table of Contents (TOC)) writes on the fermentation process of this wonderful cheese including insight to many more bioactive compounds that bring in flavor of cheese products and recipes in many different ways.
